I’ve seen variations on this recipe on a number of sites and in quite a few cookbooks. This is what we settled on, and it was yummy!
Ingredients
- Tortillas (we use Mission Carb Balance fajita size)
- 2-3 chicken breasts
- 1 bottle BBQ sauce (Sweet Baby Ray’s is awesome!)
- 1 (16 oz) pkg precut cole slaw
- 1 bottle low fat cole slaw dressing or
- ½ cup light mayo
- 2 tbsp cider vinegar
- 1 tsp Dijon mustard
- 2 tsp sugar
- ¼ tsp celery seed
Instructions:
For best results, prepare/mix cole slaw a day or two ahead.
Morning of Super Simple Supper night:
- Put chicken breasts in Crockpot & cover with BBQ sauce
- Cook on low for 7 hours.
When you’re ready for dinner:
- Remove chicken from Crockpot and shred (2 forks do the trick nicely). Tip: they shred easier when they are hot. Reserve remaining sauce for additional flavor on the wraps.
- Heat (or don’t) tortillas.
- Put shredded chicken in tortilla; top with BBQ sauce from crock pot as desired.
- Top with cole slaw.
- Wrap it up & enjoy!
